This wine has a tart cherry, strawberry jam palate. Finished with just a touch of sweetness, it is best served chilled.
Chambourcin is generally one of the last grapes to be harvested on the estate with picking times ranging from late October to early November. It is a French American hybrid that produces a deep colored and wonderfully aromatic wine. It is a bountiful producer (large clusters and many of them) that sometimes need fruit to be dropped from the vine to promote vine health and better overall wine quality. The grapes are hand picked into half ton bins in the vineyard, they are then transported to the crush pad for processing. The grapes are run through the crusher/destemer and right into half ton fermentation vessels. Fermented on the skins for 7-10 days, the grapes and then pressed and the young wine is separated from the skins. Aged in stainless steel with little to no oak exposure for 6 months. Sterile filtered and bottled.
